Ingredients
- 1 whole chicken, 4 to 5 lbs for a 6-quart Instant Pot; 5–7 lbs works in an 8-quart Instant Pot or Crock Pot
- 1 onion, quartered
- 1 lemon
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1 cup chicken broth or water (for the Instant Pot)
Instructions
Crock Pot (Slow Cooker)
- Pat the chicken dry with paper towels to help the spice rub adhere and improve skin texture.
- Place the quartered onion in the bottom of the slow cooker to create a bed for the chicken and add flavor.
- Combine the paprika, cayenne, onion powder, thyme, garlic powder, and salt. Rub the spice blend all over the chicken skin, making sure to coat evenly.
- Stuff the cavity with the reserved onion pieces, a halved lemon, and fresh thyme if you have it.
- Set the chicken on top of the onions and cook on low for 6–8 hours. No extra liquid is necessary; the chicken will release juices as it cooks.
- Optional: Add vegetables for a one-pot meal. Place root vegetables or a packet of veggies on top of the chicken so they steam and cook alongside the bird.
Instant Pot (Electric Pressure Cooker)
- Pat the chicken dry with paper towels.

- Cook on Manual/Pressure Cook for 6 minutes per pound (for example, a 5 lb chicken cooks 30 minutes). If cooking from frozen, increase the cook time—frozen whole chicken requires roughly double the standard time.
- When cooking completes, allow a 15-minute natural pressure release, then finish with a quick release for any remaining pressure. Carefully remove the chicken and let it rest for a few minutes before carving.
