Turn those dried lentils into a hearty, flavorful weeknight meal with this easy one-pot lentil and mushroom pasta. Ready in about 40 minutes, it’s savory, filling, and uses pantry staples for a simple dinner that still feels special.

Many people told me they have lentils tucked in the pantry but don’t always know what to do with them. The truth is lentils are extremely versatile and cook much faster than many dried beans, making them perfect for streamlined recipes. This one-pot method combines lentils, mushrooms, pasta, and a few simple seasonings into a creamy, comforting dish with minimal cleanup.

What I like about this recipe is how it strikes a balance between pantry-friendly ingredients and quick cooking. You sauté the aromatics and mushrooms, simmer the lentils briefly, then finish everything together with pasta and broth so the flavors meld and the sauce thickens into a creamy coating. It’s an efficient way to make a nourishing, plant-based meal without fuss.

Below you’ll find helpful substitution ideas and tips in case you don’t have the exact ingredients called for. These suggestions come from general cooking experience; they haven’t all been tested specifically for this recipe, but they should work well in most cases. If you’re unsure about a swap, feel free to try it and adjust seasoning to taste.

Substitutions and tips for One-Pot Lentil Mushroom Pasta
- Lentils: Green or brown lentils are ideal. Brown lentils will work similarly. Use any legume with a cooking time around 25–30 minutes if you want to experiment, but adjust the initial simmer time accordingly.
- Onion: Yellow onion gives a classic sweet-savory base; white onion is an equal substitute. Red onion is acceptable in a pinch though it will change the flavor profile slightly.
- Pasta: I use fusilli, which holds sauce well. If you need a gluten-free option, choose a pasta with a similar cooking time (about 10 minutes) to keep the timing consistent.
- Broth: Vegetable broth adds depth. If you only have water, boost umami with 1–2 tablespoons tamari or liquid aminos and a pinch of onion powder.
- Flour: Unbleached all-purpose flour thickens the sauce; a 1:1 gluten-free flour blend works as a substitute. If you don’t have flour, try 2 teaspoons cornstarch or 1 tablespoon tapioca starch mixed with a little water.
- Greens: Fresh chopped kale is bright and sturdy; frozen chopped kale or spinach (about 1/2 cup) can be stirred in at the end as a convenient replacement.
- Acid: White vinegar adds brightness, but any mild acid works—use a squeeze of lemon, red wine vinegar, or another vinegar to taste.

This recipe is forgiving: adjust spices, salt, and acidity at the end to suit your taste. If the sauce feels too thin after the pasta cooks, simmer uncovered a few minutes to reduce liquid and concentrate flavor. If it’s too thick, add a splash of broth or water to loosen it.

Ingredients
- 2 teaspoons (10 ml) canola oil, or other mild cooking oil
- 1 cup (140 g) diced yellow onion
- 6 ounces (170 g) sliced cremini or baby Bella mushrooms, stems removed
- 1/3 cup (100 g) dry green or brown lentils
- 1/2 teaspoon ground sage
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/8–1/4 teaspoon black pepper, to taste
- 3 cups (710 ml) vegetable broth, divided
- 2 tablespoons (17 g) unbleached all-purpose flour (or 1:1 gluten-free flour)
- 1 tablespoon (5 g) nutritional yeast
- 2 cups (170 g) dried fusilli pasta
- 1 cup (235 ml) water
- 1/2 teaspoon salt, or to taste
- 1 cup (40 g) firmly packed chopped kale, stems removed
- 1 teaspoon white vinegar or lemon juice
Instructions
- Warm the oil in a large saucepan over medium heat. Add the diced onion and sauté for 2–3 minutes. Add the sliced mushrooms and cook another 3–4 minutes, until softened.
- Stir in the lentils, sage, garlic powder, smoked paprika, and black pepper. Pour in 1 cup (235 ml) of the vegetable broth and bring to a simmer. Reduce heat, cover, and simmer for 15 minutes.
- When most of the liquid is absorbed, mix in the flour and nutritional yeast until coated. Add the remaining vegetable broth, the pasta, water, and salt, stirring to combine.
- Cover and bring to a boil over medium-high heat. Once boiling, lower heat and simmer for about 10 minutes, stirring occasionally, until the pasta is tender and the lentils are cooked through.
- If the sauce seems too thin when the pasta is done, simmer uncovered a few minutes to reduce excess liquid. If it’s too thick, add a splash of broth.
- Stir in the chopped kale and vinegar, cooking 1–2 minutes until the greens are bright and tender. Taste and adjust salt and pepper, then serve hot.
