The name is ridiculous, right? Totally.

While the name is playful, the cake speaks for itself. This single-layer coffeecake is dotted with juicy blueberries and finished with a cinnamon-sugar crumb topping. It’s the sort of homemade bake that draws people into the kitchen — friends, family, or the neighborhood teenagers who have to be coaxed out of bed for breakfast.

I don’t literally think baking this cake will secure anyone’s affection, but in practice it does bring people to the table. It’s especially popular with teens and anyone who misses breakfast after sleeping in on the first day of summer.

Whether you serve it for brunch or a simple dessert, it’s always a hit.

Why the name? You can just call it “coffeecake”.

A homemade blend works too if you prefer.

Ingredients

  • 2 cups plus 1 teaspoon all-purpose gluten-free flour blend
  • 1 tablespoon baking powder
  • 1 teaspoon sea salt
  • ½ teaspoon xanthan gum omit if your blend already contains it
  • 2 sticks butter softened (1 cup)
  • ¾ cup packed light brown sugar
  • ½ cup granulated sugar
  • 3 large eggs
  • 1 cup whole milk or plant-based milk
  • ½ cup blueberries

For the Topping:

  • 1 teaspoon cinnamon
  • ¼ cup granulated sugar
  • ½ cup blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or a gluten-free cooking spray.
  2. In a medium bowl, whisk together 2 cups of gluten-free flour, the baking powder, sea salt, and xanthan gum. Set aside.
  3. In a large bowl, beat the softened butter with the brown sugar and granulated sugar until light and fluffy. Add the eggs one at a time, beating until smooth.
  4. Beat in half of the flour mixture until incorporated, then add the milk. Add the remaining flour mixture and beat until evenly combined.
  5. Toss ½ cup of the blueberries with the extra teaspoon of flour to prevent sinking, then gently fold them into the batter. Spread the batter evenly in the prepared baking dish.
  6. Combine the topping ingredients (cinnamon, ¼ cup granulated sugar, and the remaining ½ cup blueberries) and sprinkle them evenly over the top of the batter.
  7. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool slightly before cutting and serving.

Notes

Serve warm with coffee or tea. You can simply call it blueberry coffeecake—whatever name you choose, it’s delicious.
