January is a great time to reset priorities and make your health a focus. These Healthy Snack Bars are portable, satisfying, and perfect for work, travel, or a busy day when a snack attack hits. They’re simple to make, store well in the refrigerator or freezer, and offer a balanced mix of whole grains, nuts, seeds, fruit, and a touch of dark chocolate.
I struggled with my weight for a while. The strategies that worked for me in the past stopped working, and I had to rethink my routine. Over time I found a consistent plan that fits my life — and it still works. The approach is simple and practical:
- Begin with a nutritious breakfast. A bowl of whole-grain cereal gives fiber, B vitamins, and lasting energy to start your day right.
- Plan snacks ahead of time. Having portioned, healthy snacks prevents overeating when hunger strikes.
- Stay hydrated. Often thirst masquerades as hunger. Carry water and flavor it with citrus or cucumber if you prefer.
- Move more. Regular, intentional movement makes a big difference — prioritize yourself and your activity.
Snacking used to be the toughest part of my plan. If I let myself get too hungry, poor choices followed. That’s why I created this Healthy Snack Bar recipe and portioned the bars for the freezer. Now I can grab one and go — they’re a tasty, satisfying treat that helps me stay on track.
Healthy Snack Bar Recipe
Ingredients
- 1 3/4 cups Mom’s Best Cereals Honey Nut Toasty O’s® (or a whole-grain cereal of choice)
- 1/2 cup dried tart cherries
- 3/4 cup chopped walnuts
- 1/2 cup pepitas (pumpkin seeds)
- 1/2 cup honey
- 1/4 cup almond butter
- 1/4 cup hemp hearts
- 2 oz dark chocolate bar, chopped into chunks
Instructions
- Line an 11 x 7-inch baking dish with parchment paper or foil, leaving extra to fold over the edges for easy removal.
- In a small microwave-safe bowl, combine the honey and almond butter. Heat briefly until soft and easy to stir, then mix until smooth. Allow to cool slightly and stir in the hemp hearts.
- In a large bowl, combine the cereal, chopped walnuts, pepitas, and dried cherries.
- Pour the honey and almond butter mixture over the cereal mixture and stir until evenly coated. Fold in the chopped dark chocolate so it’s distributed throughout.
- Transfer the mixture to the prepared pan and press it firmly and evenly into the pan so the bars hold together.
- Cover and chill in the refrigerator for at least 2 hours, or place in the freezer to set more quickly.
- Lift the set mixture out of the pan using the parchment or foil. Using a sharp knife, cut into 16 bars.
- Store the bars covered in the refrigerator for up to a week or freeze portions for longer storage.
Notes
If you spray your measuring cup with a small amount of nonstick spray before adding honey, the honey will pour out easily. Hemp hearts add protein and supply healthy omega-3 and omega-6 fats.
