These hot summer days call for a delicious and refreshing way to cool down — and if that treat can double as your morning coffee, even better. Who says adults can’t eat a popsicle before 10 a.m.? Mexican mocha pops are exactly that kind of indulgence: creamy, chocolaty coffee popsicles elevated with warm cinnamon and a hint of cayenne for a gentle, wake-up-the-senses kick.

The concept comes from a recipe adapted from Food & Wine, and I followed it closely the first time because the idea of folding whipped cream into a chocolate-coffee base promised an ice-cream–like texture. In practice, making whipped cream and folding it in led to separation during freezing. The solution was simple: mix the cream in directly without whipping first. The pops came out smooth, creamy, and perfectly balanced.

My version uses full-fat heavy whipping cream for richness. If you prefer a dairy-free option, substitute full-fat coconut milk or coconut cream — you’ll still get a creamy mouthfeel and an extra layer of coconut flavor that pairs beautifully with chocolate and spice. It’s all about layered flavors: bittersweet chocolate, bold coffee, warm cinnamon, and a little cayenne to brighten the profile.

To keep things simple I used Starbucks instant coffee packets, which are handy in the pantry and work well for recipes like this. Finely chopped dark chocolate melts into the hot coffee mixture to create a silky base that becomes a luxurious frozen pop. The spice is light — enough to be interesting without overpowering the chocolate and coffee.

Ingredients

  • 1 1/2 oz dark chocolate, finely chopped
  • 2 instant coffee packets (or equivalent instant coffee)
  • 1/2 cup sugar
  • 1/2 tsp ground cinnamon
  • 1/8 tsp cayenne pepper (adjust to taste)
  • Pinch of sea salt
  • 1 3/4 cups boiling water
  • 1 cup heavy whipping cream (or full-fat coconut milk/cream for a dairy-free version)

Instructions

  1. Place the chopped chocolate, instant coffee contents, sugar, cinnamon, cayenne, and a pinch of sea salt into a heatproof bowl.
  2. Pour 1 3/4 cups of boiling water over the mixture and stir continuously until the chocolate is fully melted and the sugar has dissolved.
  3. Allow the chocolate-coffee mixture to cool to room temperature. This step prevents the cream from curdling or separating.
  4. Once cooled, stir in the heavy cream (or coconut milk/cream) until thoroughly combined. Do not whip the cream first; mixing it directly produces a smoother texture after freezing.
  5. Pour the mixture into popsicle molds and freeze for at least 8 hours, or until fully set. If using wooden sticks, insert them after the pops have partially frozen so they stand upright.
