Honey-Glazed Rainbow Carrots

Have you fallen into a vegetable rut? I found myself serving the usuals—peas, green beans, corn, red peppers and zucchini—to my boys and wondered how to make dinnertime feel a little more special. We often pack raw carrots for school, but roasted carrots at dinner were rare in our house. When I spotted a bundle of rainbow carrots at Trader Joe’s—purple, white, and orange—I knew they would brighten a meal and be fun to test with the kids. Do purple carrots taste different than orange ones? We decided to find out.

Introducing new foods to the children has become an event at our table. We do a quick “taste test”: one child at a time gets the spotlight, often taking the first bite with eyes closed for dramatic effect, then they give a thumbs up, down, or in-between. The goal is simple—praise them for trying something new and celebrate the surprises when they actually like it. This ritual has helped them stay open to new textures and flavors, and presenting colorful rainbow carrots made the moment feel festive.

One of the clever tricks I used for these carrots comes from a recent magazine tip: preheat an empty baking sheet in the oven, then place it on top of the carrots while they roast. My youngest looked through the oven window and asked why I was cooking an empty pan—then learned why. The hot sheet presses heat evenly from above and helps the carrots cook quickly and develop a light, roasted exterior.

Roasting at a high temperature—450°F—took these carrots from raw to tender in about 15 minutes. When they came out of the oven, I plated them and added a pat of butter, a light drizzle of honey, a sprinkle of dried parsley, and a pinch of salt and pepper. The result was simple but elegant: sweet, caramelized edges with bright color and a soft interior. It’s a fast, attractive side dish that works with weeknight dinners or a holiday spread.

As for the question of flavor: purple carrots can taste a bit earthier and sometimes slightly sweeter than typical orange carrots, while white carrots are mild and delicate. The differences are subtle, and roasting brings out the natural sugars in all of them so the mix is beautifully balanced. The variety of colors also makes this an inviting dish for kids and adults alike.

If you try this recipe, consider serving the roasted rainbow carrots alongside roasted chicken, pork chops, or a grain bowl. You can also switch the drizzle of honey for maple syrup or finish with a splash of balsamic vinegar for a tangy-sweet twist. Leftovers keep well in the refrigerator for a couple of days and can be gently reheated or served cold in salads.
