Prep Time: 15 mins · Total Time: 15 mins · Servings: 6

Ingredients

  • 1/4 cup finely chopped pineapple
  • 2 tablespoons finely chopped red onion
  • 1/4 small jalapeño pepper, minced (adjust to taste)
  • 1 tablespoon finely chopped fresh cilantro, plus extra leaves for garnish
  • 2 teaspoons olive oil
  • 3 ripe but firm avocados, halved and pitted
  • Flaked sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the pineapple salsa: In a small bowl combine the finely chopped pineapple, red onion, minced jalapeño, chopped cilantro, and the olive oil. Toss gently to combine so the ingredients coat evenly. Taste and adjust jalapeño or cilantro according to your preference. Set the salsa aside while you prepare the avocados.
  2. Prepare the avocado “boats”: Halve each avocado lengthwise and remove the pits. If desired, you can scoop a small amount of avocado flesh from the center to create a slightly larger cavity for the salsa. Sprinkle each avocado half with flaked sea salt and a pinch of freshly ground black pepper.
  3. Assemble and serve: Spoon the pineapple salsa generously into each avocado half, mounding it lightly. Garnish with additional cilantro leaves. Serve immediately so the avocados remain fresh and do not brown.

Notes, Tips & Serving Suggestions

These avocado boats are best served fresh. Choose avocados that are ripe but still firm so they hold their shape when halved. If your avocados are very soft, consider serving the salsa alongside in a small bowl and spooning it over just before serving.

Variations and ideas to elevate the recipe:
– Add a squeeze of fresh lime juice to the pineapple salsa for extra brightness.
– For added texture, stir in a tablespoon of finely chopped cucumber or red bell pepper.
– Substitute mango for pineapple for a different tropical twist.
– Top with a small spoonful of plain Greek yogurt or a drizzle of crema for a creamier finish.
– Make these vegetarian, vegan, and naturally gluten-free—perfect for varied dietary needs.

Serving suggestions:
– Present the avocado boats on a platter for a party appetizer—garnish with extra cilantro and a few lime wedges.
– Pair with tortilla chips or crisp crackers for scooping, or serve as a light starter before a main course.

Storage

Because avocados brown quickly, prepare the salsa in advance but assemble the boats just before serving. If you must store assembled halves briefly, brush the exposed avocado flesh with a little lime or lemon juice and cover tightly with plastic wrap to minimize oxidation; consume within a few hours.
