  4. Spicy salmon: In a bowl mix Japanese mayo, sriracha, 1 tsp sesame oil, 1 tsp soy sauce, 1/2 tsp sugar, lemon zest, and chives. Taste and adjust seasoning. Chop the salmon finely until nearly paste-like and fold into the sauce.
  5. Heat oil to 375°F (190°C) in a pot suitable for frying, using a thermometer if possible.
  6. Remove the batter from the fridge and quickly coat each floured jalapeño half. Fry a few at a time—do not overcrowd—until lightly golden, about 2–3 minutes per batch. Drain on a cooling rack to remove excess oil.
