Pecan pies and pecan-topped desserts are a classic holiday favorite. Traditional pies can be time consuming, so I developed these pecan pie brownies to capture the same flavors without the fuss of rolling a crust or chilling dough. They’re made from scratch, use honey instead of corn syrup in the filling, and are straightforward to scale up when you’re serving a crowd.

3 Tips for Bakery-Style Brownies

Measure ingredients accurately. Baking is precise—use a kitchen scale when possible for consistent results.

Use a metal pan. Metal conducts heat more evenly than glass or ceramic and helps create that fudgy edge while preventing underbaked centers.

Cool before cutting. Let the brownies cool completely, then chill in the freezer for 15–20 minutes before slicing for clean, bakery-style bars.

Ingredient Substitutions

Ingredients needed to make brownies with pecan pie topping.

Honey: This recipe uses honey in the pecan filling instead of corn syrup. Honey helps bind the filling and adds depth of flavor. If you prefer, agave nectar or light corn syrup can be used as alternatives.

Bourbon: Bourbon contributes warmth and complexity to the brownie batter. This recipe was developed to include the bourbon, so omitting it will change the texture and flavor balance; substitute with an equal amount of brewed coffee only if necessary, but results may differ.

Make the Gooey Brownie Base

For a deep chocolate flavor, use good-quality unsweetened cocoa powder and dark chocolate chips. No stand mixer is required; the batter comes together quickly.

1

Make the brownie batter. Melt the chocolate with the butter, whisk together the sugars and eggs until slightly aerated, then fold in the dry ingredients and stir in the bourbon.

2

Bake the brownies. Bake long enough so the center is set and the pecan filling won’t sink into the base. A toothpick should come out with a few moist crumbs.

Make the Pecan Pie Filling

3

Cook the filling. Combine sugar, brown sugar, a little flour, honey, a beaten egg, and vanilla in a saucepan. Cook over medium heat, stirring constantly, until the mixture becomes pale and creamy—about 5 minutes.

4

Add the pecans. Stir in the chopped pecans and softened butter until everything is glossy and well coated. This is the luscious layer that creates the pecan pie experience on top of the brownie.

Assemble the Brownies

5

Top and finish baking. When the brownie base comes out of the oven, stir the pecan mixture and pour it over the top, spreading to the edges. Return to the oven and bake until the pecan layer is set—when the pan is tilted the center should not jiggle separately.

Cool and slice. Sprinkle flaky sea salt over the warm top for a perfect sweet-salty contrast. Let the pan cool completely on a wire rack, then chill in the freezer for 15–20 minutes and slice with a hot, sharp knife into bars.

Storage Instructions

Store completely cooled brownies in an airtight container at room temperature for up to 3 days. For longer storage, freeze in a freezer-safe container or bag for up to two months. Thaw at room temperature before serving for the best texture.

FAQs

Can I make this with boxed brownie mix? You can, but results will vary. Homemade batter ensures the right balance of moisture and flavor, especially when adding bourbon and the pecan filling.

Can I omit the bourbon? This recipe is formulated to include bourbon. Omitting it will change the batter’s moisture and flavor profile; if you prefer not to use alcohol, consider substituting a small amount of strong brewed coffee, understanding the texture may differ.

Equipment

  • Square 8×8 metal baking pan
  • Wire cooling rack

Ingredients

For the Brownie Batter

  • 1/2 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 10 tablespoons unsalted butter
  • 1 cup dark chocolate chips
  • 1/4 cup bourbon
  • 3/4 cup + 1 tablespoon all-purpose flour
  • 1/3 cup unsweetened Dutch cocoa powder
  • 1/4 teaspoon salt

For the Pecan Pie Filling

  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon all-purpose flour
  • 1/4 cup + 1 tablespoon honey, agave, or light corn syrup
  • 1 large egg, slightly whisked
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1/2 teaspoon flaky sea salt, for topping

Instructions

  1. Line an 8×8 square metal baking pan with parchment paper and preheat the oven to 350°F (180°C).
  2. Whisk together dark brown sugar, granulated sugar, eggs, and vanilla until light and slightly airy.
  3. Melt butter and chocolate together until smooth. With mixer on low, stream the melted mixture into the sugar-egg mixture and mix until combined. Whisk in the bourbon.
  4. Fold in the flour, cocoa powder, and salt. Pour the batter into the lined pan and bake 25–30 minutes or until a toothpick comes out with a few moist crumbs. While the brownie base bakes, prepare the pecan filling.
  5. In a small saucepan, combine granulated sugar, light brown sugar, flour, honey (or agave), whisked egg, and vanilla. Stir constantly over medium heat until the sugar dissolves and the mixture becomes pale and creamy, about 5 minutes. Stir in pecans and butter until glossy and well combined.
  6. When the brownie base finishes baking, remove it from the oven, stir the pecan filling, and spread it evenly over the top. Return to the oven and bake 15–20 minutes more, until the pecan layer is set and does not move when the pan is tilted.
  7. Remove from the oven, sprinkle flaky sea salt over the top, and cool completely on a wire rack. Chill in the freezer for 15–20 minutes, then use a hot, sharp knife to cut into 16 squares.
  8. Store leftovers in an airtight container at room temperature for 3–4 days or freeze for up to 2–3 months.

Notes

Measure flour properly. Don’t scoop directly from the bag. Fluff the flour, spoon it into the measuring cup, and level off—or use a kitchen scale for best results.

Use a metal pan. Ceramic or glass pans can alter baking time and texture. A square metal pan gives the most reliable results.

Bake the brownie layer first. This prevents the filling from sinking into the base.

Cutting tips. For cleaner slices, chill the pan briefly and slice with a knife dipped in hot water and wiped dry between cuts.
