
Vegan desserts can be surprisingly challenging to get right. Over the past few weeks I tested a number of recipes—polenta cake, sea salt brownies, pecan squares, raspberry pudding and a few earlier attempts at apple crumb bars—before arriving at this version. Many of the early trials were tasty enough to share with friends and coworkers, but I wanted a dessert that was lighter, simpler, and noticeably healthier than typical non-vegan alternatives.
My original swap was butter for coconut oil. That produced a delicious result, but it still felt heavy because of the oil content. I also wanted a short, pantry-friendly ingredient list—nothing that requires specialty stores or obscure items. While medjool dates are a common plant-based sweetener, I wanted to try a more everyday option. Prunes turned out to be an excellent substitute: naturally sweet, sticky, and easy to find at most supermarkets. The result is a no-bake, gluten-free, vegan apple crumb bar that delivers apple-pie flavor without long ingredient lists or long oven times.
These bars use oats and prunes in the crust and topping, with a simple cooked apple filling in the middle. Whole pecans add texture and depth, but you can swap almonds if you prefer. Because prunes vary in moisture, the crust may need a touch more coconut oil in some cases—if the mixture feels too dry, add an extra tablespoon. It’s essential to chill the assembled bars until very firm so they hold their shape when sliced. These are great as a dessert, but they also work perfectly as a sturdy, wholesome breakfast or snack.

Line an 8 x 8-inch baking pan with foil, leaving an overhang on the sides for easy removal. Place a square of parchment on the bottom for extra nonstick protection.

Make the crust and topping: In a food processor, pulse the pecans, oats, salt, and cinnamon until coarsely ground. Add the chopped prunes and pulse again until evenly incorporated. Add the solid coconut oil and pulse until the mix looks clumpy and holds together when pinched. If it feels sandy or too dry, pulse in an extra tablespoon of coconut oil. Reserve slightly less than half the mixture for the topping.

Press the remaining crust mixture firmly and evenly into the bottom of the prepared pan using clean hands to create a compact base.

Prepare the filling: Combine the diced apples, brown sugar, and cinnamon in a medium saucepan. Whisk the cornstarch into the water until smooth, then pour it over the apples. Bring the mixture to a boil, then lower the heat and simmer, stirring occasionally, until the apples are soft but still hold their shape and the liquid has thickened, about 15 to 20 minutes.

Spread the warm apple filling evenly over the prepared crust. Crumble the reserved pecan-oat mixture over the apples and press it in gently so it adheres.

Chill: Transfer the pan to the refrigerator and chill until very firm, at least 4 hours. Use the foil overhang to lift the whole slab from the pan, place on a cutting board, and slice into bars.

Store the bars in the refrigerator. Serve chilled or at cool room temperature. For a finishing touch, drizzle with unsweetened coconut cream or a light dusting of cinnamon before serving.
