Mocha, almond and fudge: a tried-and-true flavor combo

Mocha Almond Fudge is a flavor that instantly sparks nostalgia for many people, and it was the inspiration for this brownie. The coffee notes lift the chocolate while chopped raw almonds add a toasty crunch. The result is familiar and comforting, yet more layered than a straightforward chocolate brownie. If you love mocha desserts or anything with toasted nuts and deep chocolate, these brownies will be right up your alley.

The best brownies strike a balance of crisp, chewy, fudgy and crunchy

Brownies can run the gamut from cakey to ultra-fudgy. This recipe aims for the sweet spot: crisp edges, a fudgy center with a pleasant chew, and crunchy almond pieces throughout. The espresso powder sharpens the chocolate flavor so the brownies never feel flat or one-dimensional, while a scattering of flaked sea salt at the end brightens every bite.

Step 2: Mix the batter

Step 3: Fill the pan, top and bake

Total time from start to finish is under an hour: about 20 minutes of prep and roughly 30 minutes in the oven, depending on your pan and oven. Bake until a toothpick inserted in the center comes out with a few moist crumbs attached. Allow the brownies to cool fully for clean slices, though they are irresistible warm straight from the pan.

Description

Fudgy, chewy chocolate brownies with espresso and chopped almonds, finished with an optional sprinkle of sea salt flakes.

Ingredients

  • ½ cup unsalted butter
  • 4 ounces dark or bittersweet baking chocolate, roughly chopped
  • 1½ tablespoons instant espresso powder
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs, at room temperature
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder, sifted
  • ½ teaspoon sea salt
  • 1 cup raw almonds, roughly chopped (reserve half for topping)
  • 1 teaspoon sea salt flakes, optional for finishing

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8″ or 9″ square baking pan and line with parchment paper so you can lift the brownies out easily.
  2. Place butter and chopped chocolate in a heatproof bowl set over a pot of gently simmering water, making sure the bowl does not touch the water. Stir frequently until melted and smooth. Remove from heat and stir in the instant espresso powder. Set aside to cool slightly.
  3. In a large bowl, whisk the granulated and brown sugars together with the melted chocolate mixture until smooth.
  4. Add the eggs and 1 teaspoon vanilla extract, then whisk vigorously for about 1 minute until the mixture is glossy and well combined.
  5. Fold in the flour, sifted cocoa powder and sea salt using a spatula until just combined. Stir in half of the chopped almonds.
  6. Spread the batter into the prepared pan and smooth the top. Sprinkle the remaining almonds over the surface so they toast while baking.
  7. Bake 28–33 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs attached. Allow the brownies to cool completely in the pan for cleaner slices. If desired, sprinkle with sea salt flakes while still slightly warm.
  8. Use the parchment to lift the brownies from the pan, then cut into 16 squares and serve.

Notes

Brownies will keep well for up to 3 days at room temperature when tightly wrapped. For best texture and clean slices, cool completely before cutting. Warm is delicious for immediate serving.
