
Warm Marinated Olives
I have both a salt tooth and a sweet tooth. The salt craving is often satisfied best with something briny, punchy and aromatic—like warm spiced olives. They’re simple, impressive and effortless to prepare, and they turn an ordinary bowl of olives into a snack your guests will keep coming back to.
My olive habit began during a semester in Athens, where the neighborhood stalls sold olives by the pound and the markets brimmed with barrel-aged feta and ripe tomatoes. I didn’t become fluent in Greek, but I did learn how transformative a good olive can be. Since then I look for high-quality Kalamata or mixed Mediterranean olives, and when the flavor is slightly lacking I use a quick warm marinade to amplify the profile.
Marinated Olives at Home
The method is intentionally straightforward. Start by rinsing the olives under cool water to remove excess brine. Then combine the olives with extra virgin olive oil, a few strips of lemon rind, bay leaves and warming spices in a small pot. Warm the mixture gently so the oil takes on the aromatics without frying the olives; you want fragrant, glossy fruit, not a hot stew.

Flavor Variations and Tips
This recipe is flexible. Try Aleppo pepper for a mild, fruity heat or red pepper flakes for stronger bite. Sumac adds bright, lemony notes and toasted fennel or cumin seeds give a toasty complexity. Fresh herbs—rosemary, thyme or a couple sprigs of oregano—add color and herbaceous aroma. Finish with a few turns of freshly ground pepper and a light sprinkle of coarse sea salt if needed.
Keep the flame low and warm the olives for only five to seven minutes; this is enough time for the oil to pick up the lemon, bay and spice flavors. Serve immediately in a shallow bowl so the oil pools around the olives—perfect for spooning onto bread or mopping up with crackers. These olives pair beautifully with brie, chèvre, a simple charcuterie board, or a glass of dry white or light red wine.

Make these as a last-minute finishing touch when guests arrive, or prepare them a few hours ahead and gently rewarm before serving. If you plan to store leftovers, keep the olives covered in oil in an airtight container in the refrigerator for up to a week; bring them back to room temperature or warm briefly before serving so the oil loses its chill and the aromas revive.

Ingredients
- 1 pound mixed olives such as Kalamata, Lucques and Castelvetrano
- 1 cup extra virgin olive oil
- 3 strips lemon rind
- 2 bay leaves
- 1 teaspoon Aleppo pepper
- 1 teaspoon sumac
- A few grinds of fresh ground pepper and a sprinkling of sea salt
