It may still be winter, but I’m already thinking about summer. Spindrift’s new Strawberry Lemonade is bright, fruity, and exactly the kind of ingredient I want in a simple cocktail. To celebrate the flavor, I created a Strawberry Lemonade Mojito: an easy, refreshing drink that highlights fresh strawberries, cooling mint, and light rum.

Spindrift recently released three new lemonade flavors: Strawberry, Pink, and Lime. Each is made with real fruit and no added sugar, which makes them excellent mixers for cocktails that rely on bright, natural fruit flavor instead of syrupy sweetness. I’m experimenting with all three — this recipe highlights the Strawberry Lemonade — and the result is a mojito that tastes light, fresh, and perfectly balanced.
A classic mojito uses muddled mint and sugar. For this version, I use sliced strawberries as the primary sweet component and Spindrift Strawberry Lemonade for the citrus and effervescence. That combination yields a pleasantly fruity mojito that isn’t overly sweet, with the mint and lime keeping the drink crisp and refreshing.

A quick tip on rum: choose a light rum for this cocktail. Light rum is milder and mixes well with delicate fruit flavors. Dark rum is richer and aged longer, which can overwhelm the bright strawberry and lemon notes in this drink.

This Strawberry Lemonade Mojito is approachable enough for weeknight entertaining, yet pretty enough for a small gathering. Ingredients
4–5 sprigs fresh mint, plus extra for garnish
3–4 strawberries, sliced, plus extra for garnish
2 ounces light rum (for example, Bacardi or another light rum)
1/2 ounce fresh lime juice (about half a lime)
5 ounces Spindrift Strawberry Lemonade, or to taste

Instructions
Place the mint sprigs and the sliced strawberries in a tall glass. Gently muddle the mint and strawberries together to release their aroma and juices. Avoid over-muddling the mint to prevent bitterness.
Fill the glass with ice, then add the light rum and fresh lime juice. Pour in the Spindrift Strawberry Lemonade and stir gently to combine and lift the muddled ingredients through the drink.
Garnish with a whole strawberry and a sprig of mint. Serve immediately and enjoy the fresh, bright flavors.
Notes & Tips
If your strawberries are underripe or not very sweet, add a small pinch of sugar or a quick drizzle of simple syrup before muddling to boost sweetness. If the strawberries are naturally sweet, they will balance nicely with the lemon and lime without extra sugar.
To make a pitcher for a small group, multiply the recipe by the number of servings and lightly muddle strawberries and mint in a large pitcher. Add rum, lime juice, and Spindrift Strawberry Lemonade just before serving to preserve the bubbles.
For a nonalcoholic version, omit the rum and increase the Spindrift Strawberry Lemonade or add a splash of club soda for extra fizz.
