Polska kielbasa nestled in a soft bun and drenched in a rich sausage and Guinness extra stout beer cheese sauce — that’s the idea behind this Grilled Beer Kielbasa with Sausage and Stout Queso. It’s simple to make, ideal for feeding a crowd, and packed with bold, comforting flavors that suit Oktoberfest gatherings, tailgates, or any casual get-together.

This recipe is my nod to Oktoberfest, grilling season, and good company. Whether you celebrate with traditional lederhosen and schnitzel or just gather friends around a grill and a cooler, these beer-kissed sausages with stout queso hit the spot. In Florida we call the mild temperature shift “fall,” even if it only means a drop from the 90s to the 80s. That doesn’t stop us from cooking cozy, comforting food: grilling by the pool, enjoying sunshine and sea breezes, and serving up big flavors.
For this dish I take polska kielbasa and simmer it in Guinness extra stout to infuse the sausage with deep, roasted malt notes. While the kielbasa simmers, I make a creamy sausage queso in a slow cooker, combining cream cheese, sharp cheddar, diced tomatoes with green chiles, crumbled cooked sausage, and more stout for a smooth, slightly hoppy cheese sauce. The result is a silky, savory queso with a bit of beer-forward complexity that complements the grilled kielbasa perfectly.

After simmering, finish the kielbasa on a hot grill to develop caramelized grill marks and a juicy interior. Serve each piece cut to fit a bakery roll or hot dog bun, top generously with Sausage and Stout Queso, and add diced onions for texture and brightness. Offer tortilla chips on the side for anyone who wants to scoop extra queso — it’s irresistible that way.

This approach is flexible: scale the recipe to feed a crowd, cut the kielbasa into more or fewer portions depending on bun choice, and swap sausage varieties if desired. I’ve made the queso with pork and chicken sausage; both work well, though chicken sausage is my preference here. Use bakery rolls for the best texture, or hot dog buns if that’s what you have. For larger portions, serve in sub rolls or halve the number of cuts per sausage. No matter how you slice it, this grilled beer kielbasa with stout queso is crowd-pleasing, easy to prepare, and ideal for game day, Oktoberfest-style parties, or relaxed summer-fall gatherings.

Ingredients
For the kielbasa
- 1 (14 oz) package polska kielbasa, cut into 4–5 portions
- 1 (12 oz) bottle or can extra stout beer (Guinness or similar)
- 1 cup diced onion
- Buns or rolls for serving
Sausage and Stout Queso
- 1 lb Italian hot sausage, casings removed, cooked and crumbled
- 2 (8 oz) packages cream cheese
- 2 cups shredded sharp cheddar cheese
- 1 (10 oz) can diced tomatoes and green chiles, undrained
- 1 (12 oz) extra stout beer
Instructions
- Place all queso ingredients into a slow cooker. Set to High and cook about 1 hour, stirring occasionally, until the mixture is smooth and creamy.
- Meanwhile, add the kielbasa pieces and the 12 oz stout to a saucepan. Simmer gently for about 1 hour while the queso finishes.
- Preheat a grill to high. Grill the simmered kielbasa until well-marked and sizzling; this adds char and texture.
- Serve each kielbasa portion in a roll or bun, top with warm Sausage and Stout Queso and diced onion. Provide tortilla chips on the side for extra queso-dipping enjoyment.
Notes
I’ve prepared this queso with both pork and chicken sausages; both are tasty, though I prefer chicken sausage for a leaner result. The nutrition estimate will vary depending on bun size and whether all of the queso is used.
