Easy Sautéed Panko Zucchini — A Lean, Flavorful Side Dish
I’m continuing my effort to eat lean and wanted to share this simple, flavorful side dish I mentioned in my post about Easy Greek Grilled Chicken Pitas with tzatziki. It’s a quick, four-ingredient recipe that delivers a satisfyingly crisp texture without deep frying: zucchini, McCormick Perfect Pinch Vegetable Seasoning, extra virgin olive oil, and Panko breadcrumbs.
This sautéed panko zucchini is perfect when you want something light but still crave that crunchy, breaded sensation. The Panko browns quickly in the skillet and gives a pleasant contrast to the tender zucchini, while the seasoning adds a bright, savory note. It’s fast to prepare, versatile, and pairs well with chicken, fish, or a grain bowl.

Ingredients
– 2–3 medium zucchini, sliced into rounds or half-moons
– 1–2 tablespoons extra virgin olive oil
– 1–2 teaspoons McCormick Perfect Pinch Vegetable Seasoning (or your preferred vegetable seasoning)
– 2–3 tablespoons Panko breadcrumbs
– Salt and pepper to taste
Method
1. Preheat a skillet over medium-high heat. A nonstick or well-seasoned skillet works best to prevent sticking and to get the Panko nicely browned.
2. Slice the zucchini into your preferred shape—rounds, half-moons, or slightly thicker coins. Place the slices in a mixing bowl.
3. Drizzle the zucchini with extra virgin olive oil and sprinkle the vegetable seasoning over the slices. Toss gently until each piece is lightly coated. The oil helps the seasonings adhere and aids browning.
4. Add the seasoned zucchini slices to the hot skillet in a single layer if possible. Sauté, stirring occasionally, until the zucchini is almost tender and beginning to brown at the edges.
5. Sprinkle the Panko breadcrumbs over the zucchini and continue cooking, stirring regularly so the Panko crisps evenly and turns golden brown. This should only take a few minutes; watch closely so the crumbs don’t burn.
6. Taste and add a pinch of salt and a dash of pepper if needed. Serve immediately while hot so the Panko stays crisp.

Tips and Variations
– For extra flavor, add a small clove of minced garlic to the skillet during the last minute of sautéing. Be careful not to let it burn.
– Try adding a squeeze of lemon juice or a sprinkle of grated Parmesan just before serving for a bright finish.
– Swap the Panko for whole-wheat breadcrumbs or a light sprinkle of grated hard cheese if you prefer.
– If you like more texture, toss in a handful of chopped fresh herbs—basil, parsley, or chives—right after you remove the pan from heat.
Serving Suggestions
This sautéed panko zucchini works well as a low-effort side to grilled proteins, roasted chicken, or fish. It’s also a tasty addition to grain bowls, tossed with quinoa or farro, or served alongside a simple salad. Because it cooks quickly, it’s a great option for weeknight dinners or when you need a fast, healthy side.

Storage
Leftovers can be stored in an airtight container in the refrigerator for one to two days. Reheat briefly in a hot skillet to restore some crispness to the Panko. Keep in mind the crumb coating is best when freshly cooked.
This simple recipe proves you can enjoy a crunchy, satisfying side without deep frying. With just four ingredients and minimal effort, sautéed panko zucchini is an easy way to keep meals lean, flavorful, and wholesome.
