Prepare and apply the nut coating – Roast whole raw unsalted almonds (or your chosen nuts) at 350°F (177°C) for up to 15 minutes, watching closely so they don’t burn. Allow to cool, then chop roughly. Roll each cheese ball in the chopped nuts, pressing gently so the coating adheres.
Chill before serving – Place the coated mini cheese balls in an airtight container or on a tray covered with plastic wrap and refrigerate for at least 30 minutes to firm up. Serve chilled on crackers, toasts, or fruit slices, garnished with small herb sprigs if desired.

Storing and freezing instructions
You can prepare the cheese balls ahead of time and keep them without the nut coating in an airtight container in the refrigerator for up to one week. One hour before serving, roll them in the roasted, chopped nuts and chill for an additional hour.
For longer storage, freeze the uncoated cheese balls in an airtight container for up to one month. Thaw them overnight in the refrigerator and then add the nut coating just before serving.
