- 1 pound potatoes, peeled and chopped (or baby potatoes, halved)
Instructions
- Remove the corned beef brisket from its packaging and discard the liquid. Keep the seasoning packet and do not rinse the meat. Place the brisket in the slow cooker, fat-side up.
- Sprinkle the seasoning packet over the brisket. Pour the water (or broth) around the edges of the meat so the seasoning stays on top. Add the chopped onion to the cooker. Cover and cook on low for 8 hours.
- After about 4 hours, add the potatoes to the slow cooker so they can finish cooking with the meat.
- If you’d like to include cabbage, coarsely chop it and add it during the last 30 minutes of cooking.
