Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Scrub the potatoes thoroughly, then rub them all over with the extra virgin olive oil to coat the skins.
  3. Place the potatoes on a baking sheet or in a baking dish and roast in the preheated oven for 1 hour and 15 minutes, until tender when pierced with a fork.
