  • 125 g (1 cup) bread flour
  • 15 g (1 tbsp) baking powder
  • 1/2 tsp kosher salt
  • 1 tsp granulated sugar
  • 1 tsp onion powder
  • 57 g (1/4 cup) cold unsalted butter, cubed (European-style preferred)
  • 54 g (1/2 cup) aged white cheddar, grated (plus more for topping)
  • 54 g (1/2 cup) gruyère, grated
  • 140 g (1 cup) cooked thick-cut bacon, cut into 1/2-inch pieces (not too crispy)
  • 165 g (1/2 cup + 3 tbsp) cold full-fat buttermilk
