Stuffed bitter gourd, known in Hindi as bharwan karela, is a classic Indian side dish that pairs beautifully with rotis or parathas. When treated correctly to reduce its bitterness and cooked well, bitter gourd becomes a deeply flavorful and satisfying accompaniment. This recipe is a time investment but rewards you with excellent taste—it’s the one my late mother used to make often, and it was my father’s favourite, which is why I grew up loving it.
Choose small, dark green, slightly rounded bitter gourds with thin skin for the best results. You can prepare a batch and refrigerate the stuffed karelas for 3–4 days, frying or air-frying them as needed.

How to Prepare Bharwa Karela or Stuffed Bitter Gourd (Step-by-step pictures)
Wash the bitter gourds and scrape them lightly with a knife. Make a vertical slit from top to bottom and scoop out the flesh and seeds. Remove and discard the seeds. To reduce bitterness, rub salt both inside and out and set the karelas aside for about 30 minutes.
After 30 minutes, rinse off the salt, pat the karelas dry, and set them aside. To speed cooking and reduce frying time, you can microwave them for 4–5 minutes to half-cook, or briefly parboil them in water with a little tamarind for 4–5 minutes.

Prepare the stuffing
Heat 1 teaspoon mustard oil in a kadhai or small pan. Add sliced onions and 1 tablespoon ginger-garlic paste and sauté until the onions are golden brown. Allow the mixture to cool slightly, then blend it into a coarse, thick paste.
Add the spice powders: 1 teaspoon cumin powder, 1 tablespoon coriander powder, 1 teaspoon fennel (saunf) powder, 1/2 teaspoon garam masala, 1 teaspoon cayenne (or to taste), salt to taste, and 1 teaspoon tamarind paste or pulp. Cook the mixture on low heat until the stuffing becomes thick and the rawness of the spices is gone. Taste and adjust the seasoning. Turn off the heat and allow the stuffing to cool completely.
Prepare the karelas
Carefully spoon the cooled stuffing into each split karela, filling them generously. If you plan to shallow-fry, you can tie each stuffed karela with a simple sewing thread to prevent it from opening while frying.

Air frying method
Preheat the air fryer to 200°C (about 390°F) for 5 minutes. Lightly brush or spray oil on the air fryer basket. Arrange the stuffed karelas in a single layer, leaving space between them.

Air fry for 6–8 minutes or until the karelas turn golden brown and slightly crisp. Check them after 3–4 minutes and turn if needed. Remove when cooked through and serve hot with rotis. Air frying produces nicely browned karelas with much less oil, so the calorie count is reduced without compromising flavor.

Shallow frying method
Heat a little more mustard oil in a wide pan. Add 1/2 teaspoon fenugreek seeds and let them sputter. Reduce the heat to low and shallow fry the stuffed karelas, turning occasionally, until they are evenly browned and cooked through. You may cover the pan while cooking to ensure they cook inside without burning outside.
Serve hot with chapatis and dal. These stuffed karelas make a flavorful, tangy side and are especially good with simple lentil dishes.

Instructions

Notes
- Choose small, dark green karelas with thinner skin for easier stuffing and better texture.
- Air frying reduces oil use while still delivering browned, crisp results.
