Vegan Cheese Scones

Light, savoury scones made without dairy. Makes about 6 medium scones.

Prep: 20 mins | Cook: 20 mins | Total: 40 mins

Ingredients

  • 225 g self-raising flour (or 225 g plain flour + 1½ tsp baking powder)
  • 50 g dairy-free block margarine, cold and cubed
  • 125 g vegan cheese, grated (for example a mix of vegan parmesan and cheddar-style)
  • ½ tsp salt
  • 2 tsp mustard powder
  • 1 tbsp finely chopped chives
  • 60 ml unsweetened dairy-free milk (plus extra for brushing)

Instructions

  1. Preheat the oven to 200°C fan / 400°F / Gas Mark 6. Grease a baking tray lightly with dairy-free margarine.
  2. Tip the flour into a large bowl. Add the cold, cubed margarine.
  3. Rub the margarine into the flour with your fingertips until the mixture looks like coarse breadcrumbs.
  4. Stir in the grated vegan cheese, salt, mustard powder and chives so everything is evenly distributed.
  5. Add the dairy-free milk and mix. If the dough still seems dry, add cold water a tablespoon at a time until it just comes together. Handle the dough as little as possible.
  6. Turn the dough onto a lightly floured surface and gently roll it out to about 1.5 cm thickness (roughly the thickness of a finger).
  7. Use a pastry cutter to stamp out scones and place them on the prepared tray. Re-roll the trimmings and repeat until all the dough is used.
  8. Brush the tops with a little dairy-free milk — avoid brushing the sides to help them rise — then bake for 15–20 minutes until risen and golden.
  9. Serve warm. These are excellent with vegan butter or chutney, and freeze well for later.
