Ingredients

  • 1 pound (454 g) stale bread — milk bread, brioche, or challah
  • 3 large eggs
  • 3 large egg yolks
  • 1 2/3 cup (385 g) half and half (or half whole milk + half heavy cream)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup (100 g) packed brown sugar
  • 2/3 cup (200 g) miso caramel (or substitute caramel + white miso)
  • 1 large pear, ripe but firm, peeled and sliced thinly (about 1/8″)

Instructions

  1. Dry the bread: Preheat the oven to its lowest setting (about 170°F / 80°C). Cut the bread into 1″ cubes, spread them on a large baking sheet, and toast for 1 hour until thoroughly dried. Turn off the oven and cool the cubes completely (about 30 minutes).
  2. Make the custard: In a large bowl, whisk together the eggs, egg yolks, half and half, vanilla, cinnamon, and brown sugar until fully combined.
  3. Soak the bread: Add the dried bread cubes to the custard, toss to coat, then refrigerate for at least 2 hours to allow the bread to absorb the custard.
  4. Preheat for baking: Set the oven rack to the middle position and preheat to 350°F (180°C).
  5. Assemble: Line an 8″ cake pan with parchment, leaving extra hanging over the sides. Spread miso caramel evenly across the bottom of the pan. Arrange pear slices on top of the caramel in slightly overlapping concentric circles.
  6. Fill and bake: Transfer the soaked bread cubes into the prepared pan, pressing gently to fit. Place the cake pan on a large baking sheet to catch any drips. Bake for about 45 minutes, until the center is set and no longer jiggly.
  7. Cool and invert: Remove the pudding from the oven and cool on a wire rack until it is just cool enough to handle. Flip the pan onto a serving plate so the caramel and pears are on top. Peel away the parchment and serve warm.
