Sticky, shiny teriyaki drumsticks made on the stove? Absolutely. This one‑pan method keeps cleanup easy and concentrates the flavors as the sauce reduces and clings to the chicken. Pineapple juice is the small twist that brightens the sauce and helps it caramelize into a beautiful glaze—no sake or special pantry items required.

This recipe is restaurant quality—I would recommend it a million times! We triple the sauce so there’s extra for drizzling over rice. It’s so yummy!

What Makes This Teriyaki Chicken Drumstick Recipe Special

  1. One‑pan stovetop cooking: Everything cooks in a single skillet—no oven required. The chicken simmers in the sauce, so flavors develop without extra steps and cleanup is minimal.
  2. No marinating: Skip the overnight wait. The sauce penetrates the chicken as it cooks, delivering rich flavor in minutes.
  3. Glossy, sticky glaze: Pineapple juice helps balance the soy sauce and sugar and encourages the sauce to reduce into a shiny glaze that clings to the drumsticks.

Ingredients and Tips

  • Chicken drumsticks: Drumsticks stay moist and are a kid favorite. Removing the skin before cooking reduces excess fat and leaves a cleaner glaze. The skin usually peels away easily when gripped with a paper towel.
  • Pineapple juice: This adds natural sweetness, bright acidity, and helps the sauce reduce into a glossy glaze. Use canned pineapple juice or a similar all‑purpose pineapple juice from your pantry.
  • Quick teriyaki sauce: Mix soy sauce, pineapple juice, light brown sugar, optional mirin or rice wine, minced garlic, ginger paste, sesame oil, and a pinch of black pepper. The sauce thickens right in the pan as the chicken simmers.

How to make teriyaki chicken drumsticks

Mix the sauce and add to the chicken. In a small bowl combine the soy sauce, pineapple juice, brown sugar, mirin (optional), minced garlic, ginger paste, sesame oil, and black pepper. Place the drumsticks in a shallow skillet and pour the sauce over them.

Note: it may look like there isn’t much liquid at first, but the chicken releases juices as it cooks. That moisture, together with the sauce, is enough to cook the drumsticks and allow the flavors to concentrate.

Cook the chicken. Cover the skillet and simmer over medium heat for 5–6 minutes. Uncover, turn the drumsticks, then cover and cook another 5–6 minutes, or until the chicken is cooked through and the sauce begins to reduce.

Thicken the sauce and glaze the chicken. Remove the lid and raise the heat to medium‑high so the sauce bubbles and thickens. Toss the drumsticks gently as the sauce reduces until it becomes a sticky glaze that coats the chicken. Watch the heat carefully and lower it if the glaze starts to darken too quickly.

Serving Ideas

These drumsticks are versatile—serve them over steamed white or jasmine rice to catch every drop of the glaze. Add steamed or stir‑fried vegetables such as broccoli, bok choy, or choy sum for a balanced plate. Toasted sesame seeds and thinly sliced green onions make great garnishes.

Stovetop Teriyaki Chicken Drumsticks

Servings: 4 people
Prep Time: 5 mins
Cook Time: 15 mins
Total Time: 20 mins
Easy stovetop teriyaki chicken drumsticks with a sticky, glossy glaze. No marinating—just 20 minutes in a skillet with soy sauce, pineapple juice, garlic, and ginger.

Ingredients

  • 2 lbs (900 g) chicken drumsticks, preferably skin removed
  • 4 tbsp (60 ml) soy sauce
  • 4 tbsp (60 ml) pineapple juice
  • 2–3 tbsp light brown sugar
  • 1 tbsp sweet rice wine (mirin), optional
  • 2 cloves garlic, minced
  • 1 tsp ginger paste
  • 2 tsp sesame oil
  • 1/2 tsp black pepper

Instructions

  1. Make the teriyaki sauce: combine soy sauce, pineapple juice, brown sugar, mirin (if using), garlic, ginger paste, sesame oil, and black pepper in a bowl and stir until the sugar dissolves.
  2. Place the drumsticks in a shallow pan or skillet and pour the sauce over them so each piece is coated.
  3. Bring the pan to a gentle boil over medium‑high heat, toss the chicken so it’s evenly coated, then cover and reduce the heat to medium. Cook for 5–6 minutes.
  4. Uncover, turn the drumsticks to the other side so they’re coated in sauce, cover again, and cook another 5–6 minutes until cooked through.
  5. Remove the lid, raise the heat to medium‑high, and let the sauce boil and reduce. Toss the chicken occasionally so a sticky glaze forms. Watch carefully to avoid burning; reduce heat if the glaze darkens too quickly.
  6. When the glaze is thick and clings to the chicken and the pan bottom is slightly dry, remove from heat. Transfer the drumsticks to a serving platter, sprinkle with toasted sesame seeds if desired, and serve warm with rice.

Notes

Removing the skin: Optional but recommended for a lighter glaze. Grip the skin with a paper towel and pull it off, or trim it away with kitchen scissors.
