Ingredients:

  • 1 pack frozen lump lobster meat, or 2 fresh lobsters (boiled, cleaned, and portioned)
  • 1–2 cups mayonnaise (adjust to coat the meat)
  • 4–5 large green onions (reserve one for garnish)
  • ¼ cup black sesame seeds
  • 2–3 lemons, zested and juiced
  • 4–5 fresh long sandwich rolls or split-top buns
  • ½ head iceberg lettuce, shredded into thin strips
  • Dill pickles, sliced, to taste
  • 1 stick (about 115 g) butter
  • 1 tbsp canola oil
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. If you are using packaged lobster meat, remove it from the packaging and drain thoroughly in a fine-mesh strainer so excess liquid does not dilute the salad. If you have fresh lobster, boil and clean the lobsters, then cut the tail meat into bite-sized chunks. Try to keep claw meat as intact as possible for attractive, meaty bites.
  2. Prepare the green onions by separating the white bulb portions from the green stalks. Trim any root threads from the base. The white ends and green tops will be charred separately to develop different textures and flavors.
  3. Heat a heavy-bottomed sauté pan or cast iron skillet over medium-high heat with 1 tsp canola oil until it just begins to smoke. Toss the white onion ends lightly with a pinch of salt and a touch of oil, then add them to the hot pan. Keep them moving so they color evenly—about 3–4 minutes—until tender and well charred. Remove and repeat with the green stalks for 2–3 minutes. Once cooled slightly, mince the charred onions finely and set aside.
  4. In a large mixing bowl, combine the lobster meat, minced charred green onions, lemon juice, lemon zest, and black sesame seeds. Add enough mayonnaise to lightly but completely coat the lobster—start with 1 cup and add more as needed for your preferred creaminess. Season with salt and freshly ground pepper, tasting and adjusting the lemon and mayo balance until it feels bright and creamy.
  5. Butter the inside of each roll generously. In a large skillet over medium heat, melt the butter and toast the buns until they are golden brown on both sides and fragrant. Using butter ensures a rich, slightly crisp shell that complements the cool lobster filling.
  6. Layer a bed of shredded iceberg lettuce in the bottom of each toasted roll to keep the bread from getting soggy and to add a fresh crunch. Spoon the lobster mixture into the bun, mounding it gently. Garnish with finely chopped raw green onion, an extra sprinkle of black sesame seeds, and a few slices of dill pickle if you like a touch of tang.

Serve these lobster rolls immediately for the best contrast between warm, buttery bread and cool, creamy lobster filling. If you must prepare components in advance, mix the lobster with the mayonnaise and lemon shortly before serving; keep the lobster salad chilled and the buns toasted just before assembling. Leftover lobster salad will keep refrigerated in an airtight container for up to 24–48 hours, though texture and freshness are best the same day.
